Almond Recipe
Ingredients:
1/4 c almonds; blanch
2/3 c cream (heavy)
2 c of milk
3 eggs; separate yolks to use
1/2 c of sugar
Instruction:
Finely chop almonds then add and thoroughly mix milk then cream. Using a saucepan, bring almond mix to boil then set it aside.
Mix egg (yolks) with sugar and whisk til fluffy and light. Pour in almond mix and stir with a wooden spatula. Adjust heat to moderately-low temperature til it thickens (make sure it doesn’t boil).
Strain mix (custard), put in refrigerator til cold. Put mix in ice cream machine and process. Place in sealed container then freeze before serving.
