Avocado Recipe
Ingredients:
2 c half & half (one cup of milk and one cup of cream)
1/2 c of sugar (granulated)
3 eggs; separate yolks to use
1/4 c rum (dark)
2 avocados (Haas); puree
1 lime (juice and rind)
Instruction:
To make custard sauce, heat half & half with half cup of sugar. Simmer – do not boil. Using a regular-sized bowl, beat the egg yolks well, then gradually add a third of hot half & half mix while continuing to whisk.
Pour yolks back to simmering mix and whisk briskly as heat is turned off. Allow to cool. Once cool, pour rum, pureed avocadoes, lime juice then the rind. Mix thoroughly then pour into ice cream machine a process.
For a tangier taste, you may add two tablespoons of (balsamic) vinegar or one third cup of cognac or, one fourth cup of pureed passionfruit.
