Caramel Almond Recipe
Ingredients:
1 c of sugar (refined)
1 c of water (boiling)
4 c of cream (heavy)
1/2 c of sugar (white)
6 pcs of egg yolks; beaten lightly
1/8 tsp of fine salt
1 tsp of vanilla
Almonds (toasted)
Instructions:
Heat refined sugar inside a pan till melted an color turns golden. Carefully pour (boiling) water; stir thoroughly till dissolved. Let it boil then cook till thickened. Set on the side.
Scald the cream on a pan then add white sugar; mix thoroughly. Slowly pour the cream onto the yolks, while stirring continuously. Place back onto the saucepan; cook above moderate heat, while stirring continuously till thick.
Add vanilla, salt, and (3/4 cup) caramel syrup; mix thoroughly. Freeze inside the (ice cream) maker. Serve with caramel syrup and almonds on top.
