Caramel Recipe
Ingredients:
5 pcs of egg yolks (large)
1/6 tsp of salt
2/3 c & 4 tsps of sugar
8 tsp of water
1-1/2 c of milk
1-1/2 c of heavy cream (whipping)
Instructions:
Combine yolks and salt on a bowl; whisk thoroughly till smooth and set on the side. Combine water and sugar on a small saucepan above gentle heat; stir constantly till sugar has dissolved.
Increase heat into high then cook syrup till its color turns (golden) amber. While sugar caramelizes, scald cream and milk.
When caramel becomes (golden) amber, gradually add cream and milk. Combine cream and caramel on the mixture of egg, while whisking constantly.
Strain then refrigerate till cold. Place inside the (ice cream) machine and freeze the mixture.
