Non-Dairy Espresso Recipe

Ingredients:

2 tsps of gelatin (Kosher)
1/4 c of maple-syrup
2 tsps of vanilla
1/4 c of express at room temp
3 & 1/4 c of soy-milk (vanilla)
2 tsps of espresso-beans (ground)

Instructions:

Sprinkle the gelatin all over the coffee. Allow to sit for 10 mins. Stir occasionally ’til gelatin dissolves and becomes soft.

In saucepan, you whisk 2 c of soy-milk and maple-syrup together. Cook ’til well-heated, stir frequently. Your remove the pan from the heat then add the gelatin that was softened into heated milk mix. Stir ’til gelatin completely dissolves.

Add vanilla and remaining soy-milk. Allow to cool & refrigerate ’til chilled well.

Spoon this mixture carefully into ice-cream maker’s canister then freeze following the manufacturer’s instructions. Add the espresso beans when the ice-cream is halfway frozen.
