Ginger Recipe
Ingredients:
1 & 1/4 c of milk
2/3 c of sugar
1 Tablespoon of ginger (crystallized); chopped finely
1 c of thick cream
3 eggyolks
1/2 c of water
2 Tablespoons of ginger root (fresh); peeled and grated
Instructions:
For the syrup: You simmer the water w/ 1/3 c sugar & ginger in pan for 3 to 4 mins, stir occasionally then set it aside for 5 mins to completely cool.
For the Ice-cream: Separately scald the cream and milk in small pan. Remove it from direct heat then add 1/3 c sugar and your prepared syrup. Allow the flavors to blend by setting it aside for 15 mins.
Pass through a sieve and remove the ginger from the milk mix. Add the crystallized-ginger & eggyolks. Place in a double-boiler and gently heat. Stir constantly ’til mixture turns into thin textured custard.
Avoid letting it simmer nor boil. You cool the mixture then transfer into ice-cream machine. Freeze following manufacturer’s directions.
