Cinnamon Recipe I
Ingredients:
3 c of cream (heavy)
1-1/2 c of milk (whole)
2 pcs of vanilla beans; splitted
1 c & 2 Tbsps of sugar (refined)
6 pcs of egg yolks
2-1/2 tsps of cinnamon
Instructions:
Combine milk and cream on a saucepan. Scrape the seeds from the vanilla then add the beans. Let it simmer.
Combine yolks and sugar on a bowl then whisk thoroughly till blended well. Slowly add the hot mixture of cream while whisking continuously.
Return the mixture onto the saucepan and stir above moderately low heat till it thickens (don’t boil the mixture).
Strain onto a bowl and add cinnamon; whisk thoroughly and chill for three hrs. Pour onto the (ice cream) maker then freeze.
