Fruit Tofu-Based Ice Cream Recipe

Ingredients:

2 & 1/2 tsp of gelatin (unflavored)
1/2 cup of sugar
10 tofu ( soft); drained
3 Tablespoons fresh juice of lemon
1/2 teaspoon of extract (vanilla)
1/4 cup of oil (Safflower)
1 & 1/4 cups of fruits (frozen); thawed
1/8 teaspoon of salt

Instructions:

Proof gelatin by sprinkling it over three-fourth cup of water then sit for 3 mins. You then cook it over relatively low fire ’til gelatin becomes completely dissolved.

You add in sugar & salt then continue cooking. Stir to have sugar dissolve. Remove pan from the heat.

Combine tofu, juice, oil, 3/4 c water & vanilla in a blender then pulse ’til mixture is smoothened. Add the gelatin mix. Freeze the mixture in ice-cream machine following manufacturer’s directions or have it frozen on ice-cube trays.
