Licorice Recipe
Ingredients:
6 eggyolks (large)
1 & 1/4 c of thick cream
10 soft black-colored licorice candies (1-inch each)
1 teaspoon of extract (vanilla)
1 Tbps of liqeuer (Pernod)
1/2 c of sugar
1 & 1/2 c of milk
Instructions:
Whisk yolks lightly in bowl. You combine rest of the ingredients excluding the vanilla. Place in thick saucepan over mid-heat.
Frequently stir ’til mixture boils. Whisk this mixture slowly into the beaten yolks. Put mixture back into pan then cook over mid-low fire, stir constantly (170 degrees on candy-thermometer).
Remove pan from direct heat. Add the vanilla then strain the mixture carefully through fine-pored sieve then into bowl.
You may discard the licorice candies. Have it covered and chilled in your fridge. Transfer into ice-cream maker and allow to set for 20-30 mins ’til frozen.
