Non-Dairy Banana Coconut Recipe
Ingredients:
2 tsps of gelatin (Kosher)
1/4 c of honey
1 c of bananas; mashed
1/4 c of coconut; shredded finely
1 tsp of vanilla
2 & 1/4 c of vanilla soy-milk
1/4 c of guava juice
Instructions:
Sprinkle the gelatin all over the juice. Sit and stir occasionally for 10 mins ’til gelatin gets dissolve and is softened.
In saucepan, you whisk the 2 c soy-milk and honey together. Cook ’til well-heated, stir frequently. You remove the pan from the heat.
You add the gelatin that was softened into heated milk mix. Stir ’til gelatin completely dissolves.
Add remaining soy-milk, vanilla and bananas. Allow to cool then cover & refrigerate ’til chilled well.
Spoon this mixture carefully into ice-cream maker’s canister then freeze following manufacturer’s instructions. When ice-cream is half-frozen, you add the coconut.
