Non-Dairy Chocolate Mint Recipe
Ingredients:
2 tsps of gelatin (Kosher)
1/4 c of honey
1/2 tsp of extract (peppermint)
1/4 c of tea (peppermint); kept at room temp
3 & 1/4 c of choco soy-milk
Apple juice
Instructions:
Proof gelatin by sprinkling it into the juice. Allow to sit for 10 mins. Stir occasionally ’til gelatin dissolves and turns soft.
In saucepan, you whisk 2 c of soy-milk and honey together. Cook ’til well-heated. Stir frequently. Have pan removed from the heat then add gelatin that was softened into heated milk mix. Stir ’til gelatin completely dissolves.
You add remaining soy-milk and the extract. Allow to cool then cover & refrigerate ’til chilled well.
Spoon this mixture carefully into ice-cream maker’s canister then freeze following manufacturer’s instructions.
