Non-Dairy Cinnamon Raisin Recipe
Ingredients:
2 tsps of gelatin (Kosher)
1/4 c of honey
3 c of soy-milk (vanilla)
1/3 c of raisins; chopped coarsely
1/4 c of juice (apple)
1 tsp of cinnamon
1 tsp of vanilla
Instructions:
Proof the gelatin by sprinkling it all over the juice. Allow to sit for 10 mins. Stir occasionally ’til gelatin dissolves and turns soft.
In saucepan, you whisk cinnamon, 2 c of soy-milk and honey together. Cook ’til well-heated. Stir frequently. You remove the pan from the heat then add the gelatin that was softened into milk mix. Stir ’til gelatin dissolves.
Add remaining soy-milk, raisins and vanilla. Allow to cool then cover & refrigerate ’til chilled well.
Spoon this mixture carefully into ice-cream maker’s canister then freeze following manufacturer’s instructions.
