Pineapple Ice Recipe
Ingredients:
1 c. of sugar
1 pineapple (fresh)
1/3 c. of lime extract (fresh)
1 lg. egg white
2/3 c. of water
Instructions:
Over temperate heat, combine water and sugar in saucepan. Stir ’til the sugar is dissolved and the syrup starts simmering. Chill.
Slice pineapple lengthwise so that it is in halves, making sure not to damage the crown. From the two halves, remove the fruit, leaving about half an inch from rind.
After removing the core, cut up the fruit (1-in.chunks). Place the halves inside big plastic packs. Freeze them until they are ready for use.
Put the chunked pineapple through the food mill. Process them ’til it appears evenly pureed and smooth. Around 2 cups of puree are needed.
Mix in the lime extract and the syrup. Process for 10 sec. Transfer mixture into metal bowl or tray then freeze partially.
Next, put the thawed mixture of pineapple into the food processor’s bowl. Turn it on then off for around 8-9 times to mix. Process for around 2 min. ’til mixture is totally blended, fluffy and smooth.
Through the feed tube, put in the albumen while machine is running. Process this for a minute then freeze again.
Spoon these into the pineapple’s shells for serving.
