Strawberry Sorbet Recipe
Ingredients:
4 c. of water
2 pts. of strawberries; hulled and washed
5 c. and 2 Tbsps. of sugar (superfine)
1/4 c. of lemon extract (fresh)
Instructions:
To make about 4 cups of syrup, mix 4 cups of sugar and water in saucepan. Simmer ’til sugar dissolves. Allow to cool (preferably room temperature), store in covered container and refrigerate.
Put strawberries through the food mill to puree. Around 3 cupfuls of puree are needed. Mix in lemon extract and syrup (around a cup). Taste mixture and pour in syrup as necessary.
Transfer mixture to machine bowl then freeze. This makes around 3.5 cupfuls
